Tamiko Katsumoto advises diverse plants for gut health against chronic inflammation

The Stanford rheumatologist said about 70% of the immune system resides in the gut and urged eating 30 different plants weekly, noting 95% of Americans lack enough fibre.
She said chronic inflammation often appears as fatigue and can contribute to Alzheimer’s, heart disease, depression, rheumatoid arthritis and lupus, while acute inflammation remains a necessary immune response.
Katsumoto said lifestyle factors may drive roughly 80% of inflammation-linked diseases and recommended mostly whole plant foods, with moderation rather than strict avoidance of ultra-processed foods or animal products.
