China's Foie Gras Output Jumps to 14,000 Tons, Poised to Overtake France

Cheap prices and booming local demand are driving the surge: foie gras sells for 30 to 70 yuan a slice in China versus 15 to 40 euros in France, while producers are also rolling out new products from hotpot cuts to frozen desserts.
Large farms are scaling fast and testing exports despite regulatory hurdles. Changhao plans to raise output to 500 tons from 300, Jilin Zhengfang is targeting Southeast Asia and Europe, and one Shandong producer has signed a South Korea contract.
Chinese producers say subsidies covering more than 50% of some costs and larger livers help their edge, though exports remain under 5% of output and sources said smuggling can reach 10 tons a month.
France's foie gras industry, which with China accounts for more than 80% of global output, sees China as a rising rival especially in Southeast Asia and the Middle East, even as Europe remains tightly regulated.
