Mike von Massow and chef Zach Keeshig said shoppers can cut costs by buying local, choosing sale items and using less-expensive cuts such as skirt steak, which can be improved with overnight marinades.
They also pointed to seasonal vegetables and local fish as alternatives, with produce like corn, zucchini, asparagus and mushrooms offering lower-cost options as summer supply improves.
