Beef liver has emerged as a flagship food in Robert F. Kennedy Jr.'s MAHA push, with Kennedy calling it a “very, very affordable” nutrient-dense option.
A 3-ounce serving of beef liver contains 70.7 micrograms of vitamin B12 versus 2.41 micrograms in top sirloin, while organ meats can cost 50% to 90% less than premium cuts.
Dietitian Roxana Ehsani said liver and other offal often contain more vitamin A, B vitamins, iron and folate than common cuts, though they may also be higher in cholesterol and saturated fat.
Organ meats faded from U.S. diets after World War II as they became associated with poverty and rationing, and industrial meatpacking favored easier-to-process muscle cuts over labor-intensive offal.
That decline did not erase demand: organ meats made up 22% of U.S. beef export volume and generated nearly $1.1 billion in 2024, even as “nose-to-tail” eating shows signs of a domestic revival.
